#1: Water Glassing: Here is an old school way to storing fresh eggs up to 2 years! This gal used hydrated lime from a home improvement store, but personally I would only use organic hydrated lime from the grocery store.

#2: Pickling hardboiled Eggs: Per qt, add 2 Tbsp of salt & spices (cayenne, ginger, pepper, tumeric, cloves, even beets!) . Add a little apple cider vinegar (best but you can use other vinegars). Add peeled & rinsed & dried eggs, submerge with vinegar. Cover for 1 month. Lasts 6+ months.
#3: Dehydrating Eggs: Separate the yolks and egg
white & dehydrate under 140F. Rehydrate &
use for recipes, mayonaise, etc.
#4 Fresh eggs: unwashed will last 2 wks or more just sitting on the counter. In the fridge, they can last a few months.
